Every time I’ve visited Portugal I’ve tried to seek one of these out and never found one yet apparently they are everywhere. Anyone else managed to get one on a visit?

At Christmas the best bit is the food and I didn’t want to miss out on a decent trio of meats this year. That being said, doing a mustard and marmalade glazed horseshoe gammon, a turkey crown and a topside of beef was going to cause some serious complication alongside all of the veggies.

In search of a way I can cook one of the meats off to one side saving precious over space I turned to sous vide. When you’ve got your eye on too many thngs you can’t afford for your beef to be forgotten to the point where you are serving people grey slabs rather than beautiful slices of soft, pink, tender beef. Honestly, it was so perfect that I will like cook it this way from now on.



Some small alterations, I substitutes Bovril for a healthy dose of msg as well and using a garlic compound butter. Do not skip out on that butter baste 2nd sear post sous vide, you want the exterior dark and barky. The results.

Please excuse the lines from my knife work, I should have opted for a longer blade, guess I know what I’m asking for next Christmas.

The picture don’t do this place justice, the lighting was low and I’m not in the habit of bringing a ring light for some quick food snaps but ‘The Hollow Bottom’ located in the Cotswolds has perfect winter comfort food. Venison Carpaccio, Sausage and Mash, Chicken and Bacon Pie, Truffle Hash Browns are all to be raved about.

Also made a pit stop to Upton on Severn, a quiet and quirky little town which for the most part was closed but we were on a pilgrimage to visit ‘Minge Lane’ (look it up) and we were not disappointed. While there, we asked some loclas where the best breakfast was and were direct to Cafe 8. We thought it was just going to be a greasy spoon but they served up all manner of great focaccia sandwiches but I did go for a full english. I was so has to see rich yolks on the well cooked fried egg, all good quality produce served piping hot.
