It’s not a blend nor a method I would use but it’s interesting to see the heavy use of spices in this Sicilian ragu. No use of stock either so very stong tomato flavours in there.
Side note, I switch out red wine for a Sauvignon blanc to the mirapoix before adding back in the browned meat, tomatoes and chicken stock. You get a way less acidic flavour. Visit us @ https://www.rampant.tv/channels |
